Waldorf Salad Recipe
The original Waldorf Salad recipe was created around 1893 by Oscar Tschirky, the maitre d'hôtel of the world famous Waldorf Astoria Hotel, New York. There are numerous variations on the theme, but ultimately the essential core ingredients are apples, celery, walnuts and mayonnaise. I like to include red grapes, but dried fruits such as raisins or chopped dates are just as good.
This quick and easy salad can be assembled up to four hours before eating as long as it is kept covered and refrigerated.

Waldorf Salad
INGREDIENTS Serves 4 to 6
2 medium dessert apples, cored and diced 4 sticks celery, thinly sliced 4 spring onions, chopped (including the green parts) 2oz/60g coarsely chopped walnuts 6oz/175g seedless red grapes, cut in half 3 tablespoons mayonnaise 1 tablespoon sour cream 1 tablespoon fresh lemon juice salt & freshly milled black pepper
The above quantities can be varied to suit individual taste and preference.
METHOD
- Combine together the mayonnaise and sour cream.
- Place the apples, grapes, celery and spring onions in a bowl, add the lemon juice and toss thoroughly.
- Now add the walnuts and the mayonnaise to the other ingredients. Season to taste with salt and freshly milled black pepper. Thoroughly combine all ingredients.
- Refrigerate for at least 30 minutes.
This gourmet salad recipe is extremely quick and easy to prepare and makes a perfect appetizer for a dinner party. Alternatively, it makes an excellent, light entrée when served on a bed of crisp lettuce and topped with cooked chicken or jumbo shrimp.
