Sweet Potatoes
Recipe

This delicious sweet potatoes recipe is very quick and easy to make. Should you prefer, the potatoes can also be steamed or boiled rather than baked.

You can also adjust the quantities of the spices and maple syrup to suit your own taste. It makes a perfect side dish for a traditional Thanksgiving dinner, but is also excellent served with any meat or poultry dish at any time of the year.

Gourmet food........the EASY way!

Maple Mashed Sweet Potatoes

INGREDIENTS
Serves 4

3 medium sweet potatoes
½ cup/125ml half-and-half (whipping cream)
3 tablespoons/50g butter
3 tablespoons maple syrup
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
salt & freshly milled black pepper

METHOD

  • Preheat the oven to 375°F/190°C/gas mark 5.

  • Prick the sweet potatoes a couple of times with the tip of a sharp knife and lay them on a baking sheet. Bake for 1 to 1½ hours turning once, until soft in the center when pierced with a sharp knife. Remove from the oven and allow to cool for about 10 minutes until you are able to handle them.

  • Place the cream, butter, spices and maple syrup in a saucepan and bring gently to a simmer. Stir to mix well.

  • Cut the sweet potatoes in half and scoop out the flesh into a warm bowl. Add the heated cream mixture and mash all ingredients together. Season to taste with salt and freshly milled black pepper.

This sweet potatoes side-dish would also make a great accompaniment for a traditional Christmas Menu.
