Smoked Salmon Appetizer Recipe
This delicious smoked salmon appetizer recipe can literally be prepared in minutes! It makes a perfect first course for a dinner party and can be prepared up to 2 days in advance.

Smoked Salmon Paté served with Melba toast
INGREDIENTS SERVES 8
8oz (250g) smoked salmon 4oz (110g) ricotta 5 fl oz (150ml) soured cream juice 1/2 lemon freshly grated nutmeg salt and freshly milled black pepper
To Serve 8 slices bread 1 large lemon cut into wedges cayenne pepper
METHOD
- Place all of the ingredients in the bowl of a food processor.
- Season well with salt, freshly milled black pepper and freshly grated nutmeg to taste.
- Process for about 1/2 minute, stop the motor and scrape down the sides of the bowl. Turn the machine back on and blend until smooth.
- Now check the seasoning and add more if required.
- Spoon the mixture into 1 large dish or 8 small ramekin dishes. Smooth off the top and clean the sides of any splashes.
- Cover with cling wrap and refrigerate for at least 8 hours.
To Serve Sprinkle a little cayenne pepper over each dish (or serving) of paté, and place a lemon wedge on the side.
This delicious smoked salmon appetizer recipe is best served with Melba toast (see instructions below). If you haven't the time (or the patience!) for preparing Melba toast, then crackers, freshly toasted bread or crusty French loaf would be just as good!

Melba Toast
- Toast 8 slices of medium sliced bread (white or brown).
- Remove the crusts. Then using a sharp knife (being very careful not to cut yourself), place your hand over the top of 1 slice and cut it in half horizontally to reveal the untoasted centre.
- Then cut each square into 2 triangles.
- Repeat the process for each slice of bread.
- Now lay all of the triangles on a rack or tray, toasted side downwards and pop under a hot broiler (grill).
- Finally, toast until golden brown and the edges curl up.
Melba toast can be prepared several hours ahead and stored at room temperature. Not only is it the perfect accompaniment for this appetizer, but it also works well with most other first course dishes.
