Sausage Stuffing Recipe

A sausage stuffing recipe which makes a wonderful accompaniment for traditional roast turkey or the perfect stuffing for a pork roast.

This gourmet dressing recipe is best prepared the day before as this allows all of the fresh natural flavors to mingle. If you are using it to stuff a turkey or other poultry, stuff the bird the day before and refrigerate as this will help to flavor the finished dish.

Pork and Herbed Apple Stuffing

INGREDIENTS

Serves 6 to 8
1 large onion finely chopped
I heaped tablespoon of chopped fresh herbs (whatever is available e.g. sage, parsley, thyme, basil, rosemary)
2 peeled, cored and finely diced eating apples
Grated zest of 1 lemon (save the juice as it may be needed)
6 heaped tablespoons fresh white breadcrumbs
2lb (900g) good quality pork sausage meat or finely minced pure pork
1 egg, beaten (optional)
salt & freshly milled black pepper

METHOD

  • Fry the finely chopped onion in 2 tablespoons of oil over a gentle heat for 2 to 3 minutes until it softens but doesn't color. Allow to cool.

  • Combine the breadcrumbs, herbs, cooked onion, grated lemon zest and chopped apple in a large bowl.

  • Now work the sausage meat or minced pork and egg (if used) into the mixture. Season with salt & freshly milled black pepper. Add a little of the lemon juice if the mix appears too dry.

  • Cover and refrigerate until required.

If you are not cooking the stuffing inside the bird, simply put it onto a greased baking dish and bake it covered at 350F/175C for 30 minutes and uncovered for a further 10 minutes.

This sausage stuffing recipe is both simple, and heavenly! The perfect accompaniment to any roast poultry or pork roast.
