Rum Butter Recipe

.....the perfect accompaniment for
Christmas Pudding!

This rum butter recipe is extremely easy to make yet absolutely delicious! It is quite heavenly when served with warm mince pies or
Christmas Pudding.

It can be made a couple of weeks in advance and stored in the refrigerator. Personally, I prefer to let it stand at room temperature for an hour or 2 before serving to allow it to soften up again. But it's equally good straight out of the refrigerator....the choice is yours!

Gourmet food........the EASY way!

Rum Butter

INGREDIENTS
Makes 15oz/500g

8oz/225g icing (confectioner's) sugar
5oz/150g unsalted butter, softened
2oz/50g ground almonds (optional)
nutmeg, cinnamon & mixed spice to taste
3 tablespoons dark rum, or to taste

METHOD

  • Put the icing (confectioner's) sugar into a food processor and blend to remove any lumps.

  • Add the softened butter and blend until smooth. Now add the ground almonds and blend again until really smooth and creamy.

  • Finally flavor the butter to taste by blending in the spices and dark rum......remember that it's Christmas, so be generous!

Once you are happy with the flavor, the rum butter can be served straight away, or alternatively place it into a sealed container in the refrigerator where it will keep happily for at least a couple of weeks. Whether served chilled or at room temperature, it is absolutely delicious as it slowly melts over the warm dessert!
