Pasta Ellie

Serves 4
5 fresh tomatoes
1 large red pepper
1 large green pepper
1 large red pepper
1 large orange pepper (optional)
15 mushrooms (size- connect your tip of your long finger to thumb)
1 clove garlic
20 green olives (pip less)
2 large onions
5 slices smoked bacon
1 cube of vegetable stock
mixed herbs
salt & pepper

Chop bacon and onions and cook in a frying pan or wok.

Chop the pepper and mushroom and add to wok.

Crush garlic and add to wok.

Cut each olive in half and add to wok.

Turn stove down and simmer for 15 minutes.

Place stock in a cup with 8 table spoons hot boiling water and mix til dissolved, then add to wok.

Add half a handful of mixed herbs, pinch of salt and pepper.

Stir.

Serve hot.

For best results serve with tagliatelle pasta and garlic bread on the side.
