This lovely little party appetizer recipe is ridiculously quick and easy to make! The wonderful little savories are perfect for inclusion in a formal cocktail party menu or just a casual drinks party with friends. But make lots of them as they are always very popular!

Using ready rolled puff pastry (available in all good grocery stores) is a huge time (and effort!) saver. Plus they can be prepared up to 4 hours ahead when kept refrigerated or 2 hours ahead if covered and stored in a cool place. Bake them off just before your guests are due to arrive.

Asparagus & Parmesan Puffs

INGREDIENTS
Makes 40 squares

2 sheets ready-rolled puff pastry
3½oz/100g red pesto
20 cherry tomatoes, halved
40 fine asparagus spears, blanched & cooled (or tinned)
4oz/125g Parmesan cheese, coarsely grated
rock salt & freshly milled black pepper

METHOD

  • Preheat the oven to 450°F/220°C/gas mark 7 and lightly grease two large baking sheets with a little oil or butter.

  • Cut the sheets of pastry into 2inch/5cm squares - you should get about 40 in total.

  • Place the squares on the baking sheets about 1inch/2.5cm apart to allow for expansion.

  • Now spoon about ½ a teaspoon of pesto on each square and then ½ a cherry tomato on top of that.

  • Put a little more pesto on top of the tomatoes and then an asparagus spear over that.

  • Finally sprinkle with a little of the Parmesan and season with salt and freshly milled black pepper.

  • Bake for about 10 to 12 minutes until crisp & golden brown.

This party appetizer recipe is best baked off shortly before your guests arrive. They should be served at room temperature.
