Oven Roasted Potatoes
Recipe

.....with an Irresistible Twist!

This oven roasted potatoes recipe is given a unique twist by the using a hint of Saffron. These light and crunchy roast potatoes are enhanced by the rich colour and aromatic flavour of the Saffron.

Saffron is expensive, but as this recipe only calls for one teaspoon of the spice, it's an affordable way to be a little extravagant and it's the secret ingredient in this perfect roast potatoes recipe!

Gourmet Food......the EASY way!

Roast Potatoes with Saffron

INGREDIENTS
Serves 4

2lb (900g) roasting potatoes (such as King Edward, Desiree or Maris Piper)
1 level teaspoon saffron stamens
2oz goose or duck fat (or vegetable oil if that's not available)
freshly milled sea salt & black pepper

METHOD

  • Preheat the oven to to 425°F/220°C/Gas mark 7. Put the goose or duck fat into a roasting tin and place this in the oven.

  • Crush the saffron to a powder using a pestle and mortar

  • Cut the potatoes into even size pieces about 1½ inches (4 cm).

  • Place the potatoes in saucepan, cover with boiling water from a kettle and add ½ teaspoon of salt. Add HALF of the saffron powder, cover with a lid and bring the pan to the boil. Turn the heat down and simmer for about 5 minutes.

  • When the time is up, carefully drain off the boiling water completely. With the lid on, leave the potatoes in the pan to steam dry for a further 1 to 2 minutes. Now holding the saucepan lid on FIRMLY, give the pan a really good shake rolling the potatoes around as you do. This will scuff the potatoes and ensure a really CRISP result.

  • Now remove the roasting tin from the oven and carefully mix the remaining half of the saffron powder in with the melted fat. Put the tin over a low direct heat to keep it really hot. Carefully spoon the potatoes into the fat, season with salt and pepper and then turn them over individually to coat evenly in the saffron. Put the roasting tin back in the oven on the highest shelf.

  • Roast the potatoes for 50 to 60 minutes turning occasionally. Once they are really golden and crisp, remove them from the roasting tin onto absorbent kitchen paper. Serve immediately.

These roast potatoes make an ideal accompaniment to Traditional Roast Turkey, or Roast Shoulder of Pork.

TIP
Although this oven roasted potatoes recipe calls for saffron stamens, I find that the pre-ground saffron is just as good.

To preserve the CRUNCHINESS of these gourmet roasted potatoes, serve them immediately away after taking them from the oven.
