New Potato Recipe

Minted New potatoes

This simple, new potato recipe is the perfect way to serve those lovely, tiny potatoes that come so early in the season. Just be careful not to over cook them as this will spoil their irresistible, delicate flavor.

Here in the UK, we are very privileged indeed to be able to enjoy what many consider to be the very best variety of all new potatoes...... Jersey Royals. Their season is really very short indeed, so enjoy them whenever you can.

Gourmet food........the EASY way!

Minted New Potatoes

INGREDIENTS
Serves 4

1lb (400g) small new potatoes, washed and lightly scrubbed
1 tablespoon finely chopped fresh mint leaves
1oz (25g) butter
1 tablespoon sour cream (or crème frâiche)
freshly milled sea salt and black pepper

METHOD

For this potato recipe, I find steaming to be the best method, but boiling works just as well if you prefer.

  • Bring a steaming pan to the boil and steam the potatoes for 10 to 12 minutes until just tender when tested with the point of a sharp knife.

  • In a saucepan, melt the butter and then add the sour cream or crème frâiche.

  • Add the hot potatoes to the pan along with the chopped mint and a good seasoning of freshly milled sea salt and black pepper.

  • Put the lid on the saucepan and gently shake the pan to coat the potatoes.

  • Pile into warm dish, and serve.

Enjoy!

This new potato recipe makes a perfect accompaniment to almost any main course dish. And should there be any potatoes left over, they are also quite delicious eaten cold as a side dish with cold meats and salad.
