When is Mother's Day?

This Mothers Day Menu has been especially designed to be as EASY as possible! That way, even Dads who are not used to cooking will be able to cope with it comfortably! And if the kids want to lend a hand, better still (they will have lots of fun decorating the trifle!).

It is commonplace for families to gather on this special day of the year to celebrate and show their appreciation to their Moms. In my opinion, there is no better way to demonstrate that appreciation than by cooking a superb meal. Let Mom have the day off!

But this Mothers Day Menu is also great for other special occasions. It makes a perfect family celebratory meal for Easter, Father's Day, Thanksgiving, or Christmas. Plus it's perfect just for a traditional Sunday Lunch or Dinner any time of the year.

Below you will find my preparation and cooking timetable which will serve as a guide, and guarantee a panic-free meal! For individual recipes, simply click on the links in the menu.

Asparagus Hollandaise


Roast Chicken with Lemon and Rosemary Potatoes
Sautêed Leeks with Prunes

PLANNING NOTES AND TIMETABLE

One Day Ahead

  • Get all of the grocery shopping out of the way and don't forget the fresh flowers, greetings card and a thoughtful gift for mom!

  • Prepare the trifle as far as the custard base. Once completely cold, cover with cling wrap and refrigerate.

  • Prepare and refrigerate the chocolate truffles.

Mother's Day Morning

  • Wash and season the chicken. Place in the refrigerator.

  • Wash and slice the leeks. Place in a suitable container and cover.

  • Remove the stones from the prunes.

  • Remove the woody end from the asparagus stems and trim as directed.

  • Peel and cook the potatoes for 6 minutes. Drain as indicated in the recipe. Leave to cool, uncovered.

About Two Hours Before Dinner

  • Preheat the oven and begin roasting the chicken.

  • Decorate the trifle (this job will keep the kids amused for quite a while!).

  • Prepare the Hollandaise sauce. Keep it warm in a spotlessly clean thermos flask.

  • After 45 minutes roasting time, add the potatoes to the roasting tin.

Now that your Mothers Day Menu is well under way, it's time for YOU to relax! Pour yourself a glass of wine or grab a beer from the refrigerator....and relax a while!

  • About 45 minutes after putting in the potatoes, remove the chicken from the oven. Carefully place on a cutting board and place a piece of foil loosely over it. Leave the potatoes in the roasting tin and put them to one side, uncovered.

  • Cook and serve the Asparagus with Hollandaise Sauce.

  • Return the potatoes to a very hot oven for reheating and final crisping.

  • If you wish to serve gravy, now you can "cheat" a little! Make up or heat an instant variety, but keep it fairly thin and light. Keep it warm.

  • Sauteé the leeks and prunes. Remove from the heat, put lid on and keep warm.

And now you are ready to serve the magnificent main course from your Mothers Day Menu!

The dessert can of course be served whenever you are ready - hopefully after the kids have finished doing the dishes!
