Honey Crystal Cookies & Corn Muffins

Two recipes for the price of one!

Honey Crystal Cookies

Ingredients:
1 cup of Mama Healthy TM Honey Crystals
2 teaspoons of baking powder
1 large egg
1 teaspoon vanilla
3 cups of all-purpose flour
2 sticks of butter

1. Preheat the oven to 400°F.
2. Cream the butter and sugar together in a large bowl using an electric mixer.
Beat the egg and vanilla extract together and set aside.
3. Then, sift the flour and baking powder together and set aside.
4. Add the egg mixture to the creamed butter and sugar. Then, add the flour and baking powder mix (one cup at a time).
5. Divide the dough into three to four balls. Roll each ball to about 1/8 inch thick and use cookie cutters or a drinking glass to cut into different shapes.
6. Bake for about 7 minutes or as soon as they turning brown around the edges remove from oven. Remove cookies from the baking sheet immediately and allow them to cool.


Honey Crystal Corn Muffins

Ingredients:
5/8 cups flour
5/8 cups yellow corn meal
1/3 cups Mama Healthy Honey Crystals
1/4 cups brown sugar
1/4 cups dry buttermilk
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
2 whole eggs
1 cup of water
1/3 cups shortening

1. Preheat the oven to 400°F.
2. Blend all the dry ingredients and cut in the shortening in a large bowl using an electric mixer.
3. Beat the eggs and water and set them aside.
4. Add the egg mixture to the dry ingredients and blend until they are moistened.
5. Grease the pan and fill to about 2/3 of each muffin cup.
6. Bake for 18-20 minutes at 400°F. Remove from oven promptly.
7. Allow corn muffins to cool for about 10 minutes before removing from pan.
