Hollandaise Sauce Recipe

This easy hollandaise sauce recipe is almost foolproof! By making it using a food blender or food processor, the sauce is much less likely to curdle.

A classic French sauce, hollandaise can be used as an accompaniment to many fish dishes, is essential for Eggs Benedict, and quite sublime when served with Steamed Asparagus. It is also the base for Béarnaise sauce which has the addition of chopped shallots and tarragon.

When following a traditional method, a hollandaise sauce recipe is made by whisking the melted butter into the other warm ingredients over a pan of hot water. This method does however carry with it the greatest risk of curdling or separation, whereas the following recipe is virtually fool-proof!

Hollandaise Sauce Recipe

INGREDIENTS
SERVES 4

2 large egg yolks
1 dessertspoon lemon juice
1 dessertspoon white wine vinegar
4oz (100g) unsalted butter
salt and freshly milled black pepper


METHOD

  • Place the egg yolks in the food blender and season with salt and freshly milled black pepper and then blend thoroughly.

  • Heat the lemon juice and white wine vinegar in a small pan until it just simmers.

  • Turn the blender on again and slowly add the hot liquid in a steady stream. Turn the blender off.

  • Using the same pan, melt the butter over a gentle heat until it just starts to foam.

  • Turn the blender on again and trickle in the melted butter, a little at a time.

  • Turn the blender off and scrape the sides of the blender clean with a spatula before giving it one last blitz to incorporate everything.

TIP
The sauce can be kept warm for up to two hours by using a spotlessly clean thermos flask which has been sterilized with boiling water and then dried with kitchen paper towel.


You can adapt this recipe slightly to a lighter, foamy hollandaise sauce. Simply whisk the 2 egg whites to soft peak stage and then slowly fold in the warm sauce, 1 tablespoon at a time.

This lighter version of hollandaise sauce goes perfectly with fresh steamed asparagus.....delicious!
