Glazed
Green Bean Recipe

This simple glazed green bean recipe is the perfect way to cook tender young green beans.

The flavor is enhanced by the subtle combination of balsamic vinegar and honey which not only glazes the vegetable, but also gives a very slight "sweet and sour" twist to it.

You may use any variety of fresh green beans for this recipe.

For the very best results, this recipe calls for balsamic vinegar. This exquisite Italian vinegar is made from white Trebbiano grape juice where it gets its dark color and pungent sweetness. It is slowly aged in barrels of various woods and in graduating sizes - over a period of years. However, if you are not able to obtain balsamic, then use another mature, mild variety such as a red or white wine vinegar, or perhaps cider vinegar.

Green Beans Glazed with
Balsamic Vinegar and Honey

INGREDIENTS
Serves 4

12oz (300g) prepared (topped and tailed) green beans
1oz (25g) unsalted butter
3 fluid oz (75ml) balsamic vinegar
1 tablespoon clear honey
salt and freshly milled black pepper
chopped fresh parsley or chives

METHOD

  • Bring a large pan of lightly salted water to the boil. Add the green beans, bring back to the boil and simmer for about 5 minutes until tender-crisp and cooked (al-dente). Drain using a colander.

  • Using the same saucepan, melt together the butter, vinegar and honey. Now add the green beans, season with salt and freshly milled black pepper, and toss together until the beans are fully glazed.

  • Pile into a warm serving dish, sprinkle with the chopped parsley or chives........and serve!

For this green bean recipe, you can use any of your favorite beans such as string beans, haricot beans, French beans, or runner beans. Just be careful not to overcook them as they are a great deal more flavorsome and enjoyable when they still have a little crunchiness in them.
