Green Bean Casserole

This lovely green bean casserole recipe may take a little longer than some simpler recipes, but it is well worth the effort! The creamy bean base is finished with a crunchy cheesy and onion topping and baked until golden brown. This dish makes a perfect accompaniment to a traditional Thanksgiving or Christmas dinner but is also delightful when served as a vegetarian entreé. I prefer to use fresh rather than frozen beans whenever possible as it gives more of a crunch to the dish.

The dish can be assembled up to 2 days ahead of time and refrigerated. Once required, simply sprinkle over the topping and bake to perfection!

Green Bean Casserole

INGREDIENTS
Serves 6

15fl oz/425ml basic white sauce
2 tablespoons olive oil
1oz/30g butter
1 clove garlic, finely chopped
6oz/200g button mushrooms, washed & sliced
2 tablespoons sour cream
1lb cooked fresh green beans, sliced

TOPPING

2 tablespoons olive oil
1 large onion, peeled and finely diced
3oz/90g fresh breadcrumbs
2oz/50g grated cheddar
1 tablespoon grated Parmesan

METHOD

  • Preheat the oven to 350°F/180°C.

  • Heat the oil in a frying pan and sauté the onions until they turn a deep golden brown. Allow them to cool.

  • Spread the breadcrumbs on a baking sheet and bake for about 10 minutes until lightly toasted, stirring once. Allow to cool.

  • In a bowl, combine all of the topping ingredients. Season with salt and freshly milled black pepper.

  • Raise the oven temperature to 425°F/220°C.

  • Heat the olive oil in a large frying pan and then add the butter and garlic. Toss briefly before adding the sliced mushrooms. Sauteé over a high heat until lightly browned. Remove from the heat.

  • To assemble spread the green beans over the base of a shallow 2-quart/4 pint casserole dish and pile over the garlic mushrooms. Mix the sour cream through the white sauce and spoon that over the vegetables. Sprinkle over the topping. Bake for approximately 20 to 25 minutes until bubbling and golden brown.

If your usual green bean casserole recipe uses soup from a can and frozen or canned beans, then you will be very pleasantly surprised by this recipe. It may be a little extra work, but for a special occasion such as Thanksgiving or Christmas, it's well worth it!
