Quick and Easy Garlic Bread Recipe
This simple garlic bread recipe makes an excellent accompaniment to a rustic pasta dish such as Chicken Parmesan. It also works well with fresh, crunchy salads, served with soup, or simply eaten on its own as a tasty, light snack.
This garlic bread can be assembled a day in advance and kept covered in the refrigerator, or you can make it up in larger quantities and freeze it. Then simply defrost for an hour and finish under the grill.

Garlic Bread
INGREDIENTS SERVES 8
1/2 cup (4oz) butter, softened at room temperature 4 garlic cloves, peeled squeeze of fresh lemon juice fresh parsley leaves freshly milled black pepper 1 French stick
METHOD
- First prepare the garlic butter. If you have a food processor, chop the garlic and parsley finely. Then add the butter, a squeeze of lemon juice and season with freshly milled black pepper. Process on full speed until smooth, scraping down the side of the bowl occasionally.
- If you don't have a food processor, chop the garlic very finely or pass through a garlic press. Chop the parsley finely - you will need about 1 tablespoon. Then in a bowl, beat together the butter, garlic, and parsley until smooth and creamy. Season with freshly milled black pepper and a squeeze of lemon juice.
The beauty of this garlic bread recipe is that the garlic butter can be prepared in a larger quantity and stored in a sealed container where it will keep for several weeks. Try it on hot, baked jacket potatoes or add to freshly steamed or boiled vegetables.....delicious!
- Preheat the broiler (grill) to its highest setting.
- Now take the French stick and cut into slices, about 1 inch (3cm) thick (I think that it looks nicer if you cut them at an angle).
- Spread the garlic butter fairly thickly over one side of each slice of bread.
- Place the slices on a tray or rack, butter side up and put under the hot broiler (grill). Grill for a minute or two until golden brown.
- Serve immediately.

The actual quantities and proportions in this garlic bread recipe are not critical and can be adapted to suit personal taste. For example you may prefer to use less garlic or a different fresh herb other than parsley. You may also like a cheesy version by simply sprinkling over your favorite grated cheese before grilling.
