Eve's Pudding

This is a real family favourite of ours, and so easy to prepare. It also works really well if you mix in some (uncooked) blackberries with the cooked apple.

INGREDIENTS:
1lb cooking apples
1 oz caster sugar
2 oz margarine or butter
2 oz sugar
1 egg, beaten
4 oz self raising flour
pinch salt
1 tablespoon milk

METHOD:
Preheat the oven to 180C/350F.

1. Simmer the apples in a small amount of water with the 1oz sugar.

2. Place the cooked apples in a lightly buttered oven proof, baking dish.

3. Cream margarine and sugar until light and fluffy.

4. Beat in the egg.

5. Fold in sieved flour and salt.

6. Spread the sponge mixture over apples and bake in preheated oven for 30 to 35 minutes or until it is well risen and golden brown.
