Mashed Potato
INGREDIENTS Serves 4
2lb/1kg King Edward or Desirée potatoes generous pinch salt 4oz/125g cold unsalted butter, diced 6 to 8 fl oz/100-200ml hot, full fat milk ¼ teaspoon freshly grated nutmeg (optional) sea salt and freshly milled white pepper
METHOD
- Peel the potatoes and cut into 4 or 6 even-sized pieces depending on size.
- Put the potato pieces into a large saucepan and cover with cold water. Place over a high heat, add a generous pinch of salt and bring to the boil. Once boiling, lower the heat to medium and cover with a lid. Simmer gently for about 20 minutes until tender when pierced with the point of a knife. Drain well.
- Return the potatoes to the pan, cover with the lid and place back over a low heat for a couple of minutes to dry them out. Toss occasionally.
- Now using a masher, work the potatoes really hard until completely smooth.
- Using a wooden spoon, now work the butter into the mash beating in a few pieces at a time.
- Finally, beat in enough hot milk to achieve the desired consistency (personally, I don't like it too soft) and season to taste with sea salt, freshly milled white pepper and grated nutmeg (optional).
