Easy Homemade Ice Cream Recipe


This easy homemade ice cream recipe is stunningly different, yet absolutely mouth-watering!

Banana, Rum and Prune Ice Cream makes a superb dessert for a dinner party. Try it as an accompaniment to another dish such as Fresh Figs in Marsala Wine, or simply serve it on it's own with a warm chocolate sauce. Delicious!

Gourmet food.......the EASY way!

Banana, Rum and Prune Ice Cream

INGREDIENTS
SERVES 8

6 ripe bananas
14oz (400g) condensed milk
2 cups (500ml) heavy (double) cream
Juice of 1 lemon
2oz (50g) caster sugar
5oz (150g) ready to eat prunes (stones removed)
3 tbsp dark rum

METHOD

  • Chop the prunes into small pieces. Place in a bowl and mix with rum. Cover and leave to soak for several hours.

  • Put the peeled bananas, lemon juice and sugar into a food processor and blend till just smooth.

  • In a large mixing bowl, beat together the condensed milk and the cream. Then stir in the banana mixture.

  • Finally, add the rum soaked prunes (and any liquid) and mix well.

  • Pour the mix into a suitable freezer-proof container, cover and place in the freezer overnight.

  • During the first couple of hours of freezing, occasionally remove the ice cream from the freezer and stir well scraping the frozen ice cream away from the sides and mixing the prunes through evenly. Repeat this process until the mix starts to firm.

TIP
Remove the ice cream from the freezer about 20 minutes before you plan to serve and place it in the refrigerator. This will allow it to soften a little and make it easier to scoop.
