Here are my top 10 tips for great results from my easy dinner recipes:

  1. In the early stages don't be too adventurous. Once you build up your confidence, then you can experiment with slightly more complex recipes.

  2. Be selective about where you get your recipes from.......always rely on a reputable source. Friends will often pass recipes on with good intention, but they are not always reliable!

  3. If you are trying to impress, always rely on your best tried and trusted recipes - save the untested ones for times when mistakes (disasters even!) will easily be forgotten!

  4. If you're serving more than one course think carefully about the balance: vary the cooking methods; don't repeat ingredients; vary the textures and colors of ingredients; and don't over indulge on quantity or richness - most guests prefer to leave the table NOT wanting to explode!

  5. Don't be afraid to use some good quality ready prepared foods e.g. prepared sauces, gravy mixes, readymade pastry etc. Just be sure to buy the best that you can afford......and then hide the tins, jars or packets!

  6. Try to find recipes that allow much of the preparation and cooking to be done well in advance. Not only will that save on stress, but it also frees up more time for you to enjoy yourself.

  7. Don't be tempted to try and cook for too many people, especially if you are new at entertaining. Personally, I rarely cook for more than six people at any one time - most of us are not geared up for any more than that.

  8. Plan ahead - make lists of what you need to buy and what can be prepared and when. If it can be prepared well in advance and refrigerated or frozen then do it. Most good recipes will indicate if this is advisable or not.

  9. Think about how best to present your food. Don't be tempted to pile everything onto one plate - serve side dishes in serving bowls or on platters where your guests can help themselves. Don't try to be "over-fancy" but do make sure that the plates look appetizing, tidy and the way that you would expect them to be served to you.

  10. Finally, don't get upset when things go wrong! Making mistakes is all part of the learning process....and in my experience most people are VERY forgiving and will just laugh it off.
