PLANNING NOTES & TIMETABLE

Firstly, click on each individual recipe from the Menu above and print them off. Then use the following guide to help you with the planning.

A Few Days Ahead.........

  • High priority.....buy Dad a nice gift and card! This dinner menu idea is a great way of showing how much you care, but a small, and well thought out gift will really make the day special for him!

  • You can prepare the stuffing (duxelle) for the Fillet of Beef Wellington up to 2 days in advance. Once prepared, cover and refrigerate it.

The Day Before.......

  • Do all of the grocery shopping....don't get caught out by leaving it to the last minute!

  • Prepare the Crème Brûllée. Once completely cold, cover with cling wrap and refrigerate.

Several Hours Ahead......

  • Wash the new potatoes really well and then immerse them in cold water.

  • Depending upon the type of green bean you are using, top and tail them, and/or slice them. Wash them in a colander under cold running water.

  • Wash the mint, pick off the mint leaves and chop finely.

  • Now set the table ready for dinner so that you don't have to even think about that later when you are busy cooking.

About 2 Hours Ahead.......

  • Prepare the Beef Wellington and refrigerate.

  • Wash the summer berries for the dessert. Place in a serving bowl, add the sugar and chosen liqueur, and combine well. Cover with cling wrap and place in the refrigerator.

About an Hour Ahead........

  • Bake the Beef Wellington.

  • Prepare the caramel for the crème brûllée and top off the dish as directed.

  • Prepare the Madeira Jus for the Beef Wellington.

Shortly Before Serving........

  • About 30 minutes before serving, you can prepare the avocado, mozzarella & tomatoes for the appetizer. Cover and refrigerate.

  • Steam or boil the new potatoes and green beans. Finish off as directed and keep warm.

  • Finish preparing the appetizer.

You are now ready to serve........

ENJOY!

This dinner menu idea is just one of my personal selection of Holiday menus. But should you prefer a less formal celebration, you might prefer my barbecue menu.
