Corn on the Cob

This corn on the cob recipe is perfect for a barbecue, but it's just as good cooked in your kitchen under a hot grill (broiler). It is best eaten using your hands.....not terribly elegant perhaps, but absolutely delicious! I always serve it with butter and of course a napkin as it's a bit messy!

Barbecued Corn on the Cob

INGREDIENTS
Serves 4

2 cobs sweet corn
1 dessertspoon olive oil
salt and freshly milled black pepper
melted butter to serve

METHOD

  • Begin by carefully stripping off the husks and the fine threads from the corn. Wash under cold water and then dry them with kitchen paper.

  • Brush the cobs with the olive oil and then season all over with salt and freshly ground black pepper.

  • Place the corn on the hot barbecue and cook for around 8 to 10 minutes turning frequently. The kernels should by this time be toasted a lovely, golden brown color. Check with the point of a sharp knife to see if it is tender.

  • Brush a little melted butter over each cob and cut into chunks.

This corn on the cob dish is ridiculously quick and easy to prepare and is yet, utterly delicious! You can serve it as an appetizer at a barbecue or as a side dish to the main course.
