This elegant barbecue menu is a joy to prepare as so much of the preparation can be done in advance. It is perfect for pretty well any warm weather occasion such as Memorial day, Father's Day, 4th of July, Labor Day etc.
Barbecuing food is such a great way to bring out the flavor of food so don't restrict it to just burgers and sausages.....be adventurous. You can easily find recipes on the internet for barbecued fish, meat vegetables and even fruit.
The process of marinating the food in advance, not only saves time for when your guests arrive, but this also improves the flavor and the succulence.

Planning Notes and Schedule of Tasks
The Day Before....
- SHOP! Don't leave it all until the day of the party! Make a list and buy everything that you will need for the barbecue menu, including the wine and drinks.........not forgetting of course, gas or charcoal for the barbecue.

- Prepare the marinade for the chicken wings. Coat them as directed and refrigerate.
- Prepare the custard for the crème brûllée. Once cool, cover with cling wrap and refrigerate.
- Try to select appetizers that can be prepared the day before such as Mini Croustades filled with Smoked Salmon & Caviar or Savoury Cheese Palmiers.
A Few Hours Before....
- Prepare the paste for the prawns and marinate as directed. Refrigerate.
- Prepare the marinade for the steaks and marinate as directed. Refrigerate.
- Prepare and stuff the mushrooms. Cover with cling wrap and refrigerate.
About an Hour before....
- Prepare the Avocado, Mozzarella & Tomato Salad. Cover & chill.
- Prepare the corn on the cobs ready for cooking.
- Bake the potatoes. Once cooked, wrap them individually in kitchen foil and keep warm on the edge of the barbecue.
- Prepare the caramel for the crème brûllée and finish as directed. Once cold, cover & refrigerate.
- Prepare the summer berries for dessert. Cover and chill.
- Light the barbecue.

Tips for a Perfect Occasion....
This barbecue menu has been designed for an elegant, but informal evening. But being casual shouldn't mean lowering standards! So make a little extra effort to make it really special....
- Set the table elegantly, but informally. Use your normal china, glassware and cutlery.....avoid plastic and paper at all costs!
- Use candles and flowers to set the scene and don't forget the background music.
- Self-service for a barbecue is perfectly acceptable. Either set the food on platters on a side table or if space permits, place the platters directly onto the dining table.
- Provide extra napkins and finger bowls when serving a dish that is to be eaten with fingers.
- Have an ample supply of wine and soft drinks such as Iced Tea readily available.
- Set up the barbecue area with everything you will need for cooking including solid tongs and long-handled forks. Ensure that you have enough preparation space, a bin for rubbish and a cleaning cloth for spillages.
- Make sure that you've got someone helping you because if you leave the barbecue for more than a moment or two, the food will burn! That's one of the real joys of barbecuing...guests are usually more than willing to help.
- Ensure that whoever is cooking is wearing an apron to protect from spitting & splashes.
- Always warm the dinner plates before serving.
