The Perfect
Baked Potato
Recipe

This baked potato recipe produces a crisp golden skin on the outside and a pure white fluffy texture on the inside.

You can bake almost any floury potato such as Maris Piper, King Edward, Golden Wonder or Marfona. But do try to make sure that they are all even-shaped and similar in size so that they cook evenly.

A baked jacket potato makes a perfect side dish to almost any main course, but also an nutritious light meal or snack when accompanied by your favorite topping.......anything from baked beans to smoked salmon and shrimp .....the options are endless! In this baked potato recipe, I am keeping it simple and luxurious with just a chunk of lovely Brie and a sprinkling of fresh chives - quite delicious!

The Perfect Baked Potato
topped with Brie and Fresh Chives

INGREDIENTS
Serves 4

4 medium size potatoes, about 12oz/350g each
sea salt
about 4oz/120g Brie (or other soft cheese)
about 10z (25g) fresh chives, finely chopped
freshly milled black pepper

METHOD

  • Preheat the oven to 200C/400F/gas mark 6.

  • Wash the potatoes well in cold water and then dry them with kitchen paper. Prick the skin several times with the point of a sharp knife or skewer.

  • Lay the potatoes on a baking sheet and season with sea salt. Bake the potatoes for approximately 1¼ to 1½ hours, depending on the size. Test with a sharp knife or skewer - when inserted, it should be tender with no resistance.

Cooks Note
For an extra crispy skin, turn the oven up to 220C/430F for the last 20 minutes of baking.

  • Remove the potatoes from the oven and allow to cool for about 5 minutes.

  • With a sharp knife, slit a cross into the top of the potato. Open up the potato by pinching with thumb and forefinger using both hands.

  • Place a piece of Brie in each potato and then sprinkle over the chives and some freshly ground black pepper.

EAT AND ENJOY!

Below are some further topping and filling suggestions which will liven up any baked potato recipe:

  • Salsa
  • Baked beans with grated cheese
  • Garlic butter
  • Thick Greek yogurt mixed with diced cucumber, coriander and chopped spring onion
  • Sautéed mushrooms - with or without garlic
  • Pizza sauce and grated mozzarella
  • Diced smoked salmon and shrimp with Hollandaise sauce
  • Grated Cheddar and diced tomato
  • Cottage cheese with coleslaw
  • Diced corn beef and horseradish sauce
  • Scrambled egg with diced tomatoes and green peppers
  • Tzatziki with grated mature Cheddar
