Baked Apple Recipe

This easy baked apple recipe makes a perfect winter pudding. It is actually a traditional German Christmas recipe combining late autumn whole apples with seasonal cranberries, marzipan and a redcurrant jelly glaze. Served with a cinnamon spiced cream, this would be an excellent, simple dessert course for a festive Christmas Dinner.

Baked Apples with Marzipan and Cranberries

INGREDIENTS

SERVES 4

4 large apples
3 tablespoons redcurrant jelly
3oz (75g) fresh or frozen cranberries, thawed
4oz (100g) pack marzipan, chopped

To Serve
4oz (125g) curd cheese
½cup (140ml) whipping cream
1 tablespoon caster (extra fine) sugar
½teaspoon ground cinnamon

Tip
Although this baked apple recipe calls for Quark, you can substitute ricotta or cream cheese if you prefer.


METHOD

  • Preheat the oven to 340F, 170C, gas mark 3.

  • Using an apple corer, remove the core from each apple. Insert the corer 3 or 4 times more to make a larger hole.

  • Using the tip of a sharp knife, score the skin around the middle of the apples (this will help them to keep their shape).

  • Put the redcurrant jelly into a pan and heat gently over a low heat until runny. Add the cranberries and stir through the glaze for about a minute, just enough to soften, but not cook them. Allow to cool for about 10 minutes.

  • Stand the apples upright in a lightly buttered baking dish.

  • Press a little of the marzipan into the center of each apple and then spoon in a little of the cranberries. Repeat this process until each apple is filled. Finish with the remainder of the cranberries and glaze over the top of the apples.

  • Bake for 45 to 50 minutes, basting the apples with the juices every 15 minutes. The apples should be soft in the center with lightly wrinkled skins.

  • Remove from the oven and allow to cool, spooning the glaze over the apples once or twice.

  • Beat together the Quark, cream, sugar and cinnamon.

  • Serve the warm apples with a little of the cream alongside.
