Bacon and Mushroom Savoury Rice

This is a very quick and simple recipe which I made up myself. It is delicious served either as a light main meal or as a side dish accompaniment.


INGREDIENTS:
1/2lb mushrooms
2 cloves garlic
1 small onion, finely chopped
4 to 6 bacon rashers cut into small pieces
One sachet of boil-in-the-bag rice
1 tin chopped tomatoes
tomato puree
spring onions

METHOD:
1. Fry the bacon in a little oil and then add the chopped onion and crushed garlic. Cook until the bacon is slightly crispy and the onions softened. Remove from the pan and keep warm.

2. Slice the mushrooms and cook for a few minutes. Return the bacon and onions to the pan and add the chopped tomatoes.

3. Now add enough cooked rice to the pan to absorb the tomato juice.

4. Season to taste with salt, pepper and the tomato puree. Heat through thoroughly and finally garnish with the finely sliced spring onions.
