Avocado Recipe

Avocado and Mozzarella Salad

This is an extremely simple avocado recipe that never fails to delight my dinner guests.
But for total success, it relies on the very best quality ingredients you can find - luscious ripe avocado pears; juicy ripe plum tomatoes; the finest Italian mozzarella; extra virgin olive oil; and lovely large, marinated black olives. These few simple ingredients combined, produce a very stylish Mediterranean first course perfect for a dinner party.

To keep things quick and easy, you can use a bottled pesto for this avocado recipe.....homemade pesto is utterly wonderful, but most of us really, just don't have the time to prepare it!

Gourmet food........the EASY way!


Avocado, Mozzarella and Tomato Salad

INGREDIENTS
Serves 42 small ripe avocado pears
juice of 1 large lemon
6 ripe plum tomatoes
6oz (175g) mozzarella cheese
3oz (75g) pitted black olives
2 tablespoons pesto sauce
2 tablespoons extra virgin olive oil
salt and freshly milled black pepper
fresh basil leaves

METHOD

  • Cut the avocados in half and remove the stone. Remove the skin and then slice the flesh fairly thinly. Place in a bowl and sprinkle with lemon juice.

  • Now slice the mozzarella thinly and cut the tomatoes into small wedges. Add to the avocado along with the olives. Season with salt and freshly milled black pepper. Toss gently to combine the flavors and then cover and chill in the refrigerator for 30 minutes.

  • When you are ready to serve, drain the avocado, mozzarella, tomatoes and olives and carefully pile the ingredients onto a serving dish being careful not to break up the avocados.

  • Mix together the reserved juices with the olive oil and pesto. Spoon a little of the dressing over the salad and sprinkle over a few basil leaves.

  • Serve the salad with crusty bread and the remaining dressing to the side.

Not only does this wonderful avocado recipe make a perfect first course for a spring or summer dinner party or barbecue, but it can also be served as a refreshingly light lunch dish when accompanied by a rustic selection of freshly baked breads or perhaps some delicious
minted new potatoes.
