Welcome to my festive edition of Gourmet High Life.

It's that time of the year again when suddenly December 1st dawns.......and panic sets in!! So much to do, and so little time to do it! My aim in this edition is to try and reduce that sensation of panic and turn it instead into a tingling excitement and glorious anticipation of the most wondrous of celebrations - let's enjoy Christmas together!

So in this seasonal newsletter, I want to share with you some useful tips for taking the stress out of Christmas as well as a few suggestions for some rather special treats. Here you will find:




But above all, please, please do remember that Christmas is a time to be enjoyed! Don't take on more than you can confidently cope with! I believe that it's always preferable to keep the menu relatively uncomplicated. Great, simple food, beautifully cooked and presented is a winning formula! Plus, make sure that you select dishes where as much preparation as possible can be done in advance.


Countdown Checklist to Assist in Planning

  • Start planning your menu late November/early December.

  • If you are making a Christmas pudding or Christmas cake, make them as early as possible. Both will improve in taste with keeping.

  • Write a list for all of the Christmas gifts you intend to buy, and a list for all of the Christmas cards that you intend to send.

  • Complete all of your gift shopping early in December and gift wrap them.

  • Write and address all of your cards so that they are ready for posting.

  • Whether you are cooking a traditional roast turkey or other meat or poultry, make sure you order it well in advance.

  • Think about furniture - is your dining table big enough with sufficient chairs? If not borrow additional items.

  • Do you have sufficient china, cutlery, glassware and cooking utensils? If not, see if you can borrow some from a friendly neighbor or relative.

  • Decorate the house and Christmas tree with your favorite decorations..

  • "Spring-clean" the house well ahead of the big event.

  • Complete as much of the food preparation ahead of time as is possible. Dishes suitable for freezing can be made well ahead of time while others can be pre-cooked or partially cooked and chilled.

  • Try to buy in any food that is not highly perishable several days before.

  • Clear out the refrigerator - you will need lots of space!

  • Do as much of the final cooking preparations as possible on Christmas Eve.

And finally, write down a timetable for the cooking of the Christmas meal and think it through step by step so that you are fully prepared for the big day!

My all-time Favorite Eggnogg Recipe

CHRISTMAS EGGNOG

INGREDIENTS

2 egg yolks
4 cloves, whole
4 cups/30fl oz whole milk
4 cups/30fl oz heavy (double) cream
1 cup/8 fl oz light rum
½cup brandy
½cup bourbon
1¾ cups sugar
2½ teaspoons pure vanilla extract
1 teaspoon ground cinnamon
¾ teaspoon ground nutmeg
